Look like the switch name was changed in tar 1.5 :-/

tar --version
tar (GNU tar) 1.14

info tar

`--strip-path=NUMBER'
     Strip given NUMBER of leading components from file names before
     extraction. For example, if archive `archive.tar' contained
     `/some/file/name', then running

          tar --extract --file archive.tar --strip-path=2

     would extracted this file to file `name'.
