I took another look at your config.log, and the first obvious thing I saw is
that you don't seem to have set up the proper user environment, in
particular the PATH. Start by creating the lfs user and using the
.bash_profile and .bashrc given by the book.

Could you link me to the specific bash profile you are referring to? Please
note I am expecting this to be with regards to the following documentation
which I have followed to a t and as @Aleksandar recommended I verified the
results are the same by running the compile commands directly from the
shell-- same result.
